PLAYSTATION®3 system's Parental Control Levels let you determine what content younger players can access, by restricting the types of games being played. You can set Parental Controls from Level 1 to 11, depending on the amount of access you want to allow. The lower the level selected, the greater the restriction imposed.
You’ll find detailed descriptions of the various levels at the front of every PS3™ game manual, but the screenshots below will show you how to set up your Parental Controls.

Scroll left through PLAYSTATION®3 system’s Home Menu (XMB) and highlight Settings.
Scroll down to [Security Settings] and press the X button.
To reset or change your password highlight [Password], press the X button and enter a four-digit password.
To change the Parental Control Level highlight [Parental Control], press the X button, enter your four-digit password and press the X button again.
Here you can choose which level you would like to set the Parental Controls at. The lower the level, the greater the restriction on content. Parental Controls can also be turned off in this menu.
